Gastronomy
The heartbeat of our culture
Polynesian gastronomy is inseparable from our tropical climate, yet fine dining here also owes much to our French heritage. These two contrasting influences produce a unique fusion of flavour that celebrates the natural abundance of the landscape and our proximity to the ocean: inspired by our island surroundings, with a touch of classic culinary finesse.
Our chefs nurture longstanding relationships with local fishers, farmers and other artisanal producers. By insisting on locally sourced, sustainably cultivated and seasonal produce, we’re helping protect French Polynesia’s precious biodiversity and consciously limiting how much food we import.

Otemanu
Set at the highest point of the property, the main restaurant looks out across the lagoon, with uninterrupted views of Bora Bora. Breakfast begins the day here, while evenings unfold beneath the stars, with a more refined approach to dining.
Chef Laurent Touchard brings a Polynesian touch to French and international cuisine, drawing on the flavours of the islands.

Chef Guillaume Hel Guillou reimagines classic French dishes with highly creative, sensorial embellishments, using seasonal, local produce and composed over three or five courses.
